Easy Grilled Pita Bread Pizzas

We’re in the middle of spring here and have enjoyed some lovely sunny weekends lately. It’s been beautiful sitting out on the deck soaking up the sun.

Pita Bread Pizza has been a highlight for make your own pizza night for Sarah and I.

The concept is simple.

  1. Pita breads
  2. Chicken, mozzarella and assorted veges from the fridge
  3. ?????
  4. Pizza!

Fire up the grill, prepare the ingredients and enjoy the evening.

Easy Grilled Pita Bread Pizzas

Have fun with the family with a make your own pizza night. Just grab whatever is in the fridge with a bit of cheese, fire up the grill and enjoy!

You'll Need...

  • No measurements - just grab what you've got
  • Pita pockets (enough for as many pizzas that you need)
  • Rotisserie chicken
  • Capsicum, diced
  • Spring onion, diced
  • Fresh buffalo mozzarella
  • Grated mozzarella
  • Pizza sauce / tomato paste
  • Fresh basil


  1. Fire up the grill (or oven) for indirect medium heat, have all ingredients ready to go.
  2. Grill pita breads over direct heat for a minute to brown one side, remove from grill and layer grilled side with pizza sauce and layer on toppings.
  3. Return to the indirect side of the grill, close lid and cook for 5-6 minutes until cheese has melted.
  4. Remove from grill, slice and eat immediately (don't burn your mouth on the cheese)

    Well, it seems as well as Italian bread we have BBQ in common. Tonight hubby is making grilled chicken on the BBQ grill. We have 2 — a gas one also. Have you made a whole pork butt?? Oh my those are good. BBQ’ing is a way of life for us. Love your little pita pizzas. Have you made your own pitas? The recipe is on the blog. They are really easy and fun to make!! Don’t be a stranger and let us know how the rolls/hoagies turn out. Oh, by the way, it is going on winter here but we are what are considered “snowbirds” in this country. We head south for the winter so we can continue to BBQ 🙂
