All barbecue begins with a rub. A rubs main purpose is to complement the meat, not detract from it. Some meat require the extra flavours from a spice rub, and others may just need a little.
Today we’re going to look at the building blocks for a basic pork rub that will be the gateway to rubs for every type of meat you would want to barbecue.
This is the starting point for many flavours of rub that we will feature at BBQ Like It’s Hot! from here ingredients can be added and subtracted to get that delicious sweet, smoky, earthy or hot coating desired by barbecue lovers.
BBQ Pork Rub
A quick and easy rub suitable for pork that can be made in bulk and stored for use later.
- 100g Coarse sea salt
- 50g Black pepper, coarse ground
- 50g Smoked paprika
- 50g Paprika
- 10g Cumin seeds, ground
- 10g Mustard seeds, ground
- 1tbsp Garlic granules
- 1 tbsp Dried mixed herbs
- 1 tspn Cayenne pepper
- Combine all ingredients with a mortar and pestle or a food processor.
- Coat any meat destined for the smoker.
